- 1 piece mentaiko
- 🥚 3 eggs
- 🍚 400g cooked white rice
Vegetables
- 🧅 1/2 green onion, sliced
- 🧅 Chopped green onion, as needed
Seasoning
- 1 tbsp salad oil
- 1 tbsp sake
- 2 tsp mirin
- 1 tsp soy sauce

Cut the mentaiko open and scoop out the roe with a spoon. Slice the green onion into rings.

In a bowl, beat the eggs and mix in the mentaiko, green onion, and seasoning ingredients (sake, mirin, soy sauce).

Heat salad oil in a frying pan over medium heat. Stir the egg mixture quickly until semi-cooked, then remove from heat.

Serve the cooked rice in bowls, top with the egg mixture, and garnish with chopped green onion.
