Chicken
- 🍗 1 piece (200g) chicken thigh
- 1 slice ginger
- 1 tbsp sake
- 🧂 Pinch of salt and pepper
Vegetables
- 🥒 1/2 cucumber, thinly sliced
Sauce
- 3 tbsp white sesame paste
- 🍬 1 tbsp sugar
- 1/2 tbsp soy sauce
- 1/2 tbsp vinegar
- 1 tsp sesame oil
- 1/2 tsp grated ginger
- 2 tbsp ground sesame
- 1 tbsp steaming liquid

Place chicken thigh skin-side down and make shallow cuts in 4 places.

Rub chicken with sake, salt, and pepper, place ginger slice on top, cover loosely with plastic wrap, and microwave at 600W for 4 minutes. Let cool with wrap on and reserve 1 tbsp of steaming liquid.

Slice cucumber thinly into strips.

Mix all sauce ingredients in a bowl to create Bang Bang Chicken sauce.

Arrange cucumber and sliced chicken on a plate, drizzle sauce over the top.
