- 🍆 2 eggplants
- 🧅 Chopped green onion, as needed
Seasonings
- 1/2 tbsp sesame oil
- 🧂 2 tbsp concentrated soy sauce
- 1 tbsp mirin
- 1/2 tsp grated ginger

Cut off the stem of the eggplants, slice them in half lengthwise, and make shallow cuts on the surface. Soak in water for 5 minutes and drain.

In a microwave-safe container, mix the seasonings (☆). Add the eggplants and coat them in the mixture. Cover loosely with plastic wrap and microwave at 600W for 3 minutes. Flip the eggplants and microwave for another 3 minutes.

Serve on a plate and garnish with chopped green onion.
