    • 🐟 4 slices (400g) yellowtail fillets
    • 🌱 1 piece ginger, julienned
    • 🧂 Pinch of salt
    • White scallion, thinly sliced
  • Seasoning Liquid

    • 4 tbsp concentrated soy sauce (3x strength)
    • 💧 2 tbsp water
    • 1 tbsp sake
    • 🍬 2 tsp sugar

Sprinkle salt over the yellowtail fillets and let them rest for 10 minutes. Pat dry with paper towels.

Julienne the ginger. Mix the seasoning liquid ingredients (soy sauce, water, sake, sugar) in a bowl.

Place half of the seasoning liquid and half of the ginger in a microwave-safe container. Arrange 2 yellowtail fillets without overlapping. Spoon some seasoning liquid over the fillets, cover loosely with plastic wrap, and microwave at 600W for 1.5–2 minutes. Flip the fillets, spoon more seasoning liquid, cover again, and microwave for another 2 minutes until cooked. Repeat for the remaining fillets.

Serve the cooked yellowtail on a plate and garnish with thinly sliced white scallion.
