- 🍄 1 pack enoki mushrooms
- 🧅 Chopped green onions, as needed
Protein
- 2 packs natto (about 40g each)
Seasoning
- 2 tbsp miso
- 1 tsp Japanese dashi powder
- 💧 500 ml water

Trim the root of the enoki mushrooms and cut them in half lengthwise. Mix the natto well in a bowl.

Bring water to a boil in a pot, add dashi powder and enoki mushrooms. Cook until the mushrooms soften, then dissolve 2 tbsp of miso into the soup and add the natto.

Once the soup is heated through, serve in bowls, garnish with chopped green onions, and optionally sprinkle with shichimi chili powder.
