- 🥚 500g eggs
- 🧂 230g sugar
- 30g corn syrup
- 150g cake flour
- 🥛 40g milk
- 10g instant coffee
Coffee Syrup
- 💧 100g water
- 🧂 50g sugar
- 6g instant coffee
Coffee Cream
- 200g whipping cream
- 🧂 30g sugar
- 5g coffee liqueur
- 8g instant coffee
- 💧 20g warm water
步驟
Prepare the coffee syrup by mixing water, sugar, and instant coffee until dissolved.
Whisk eggs, sugar, and corn syrup over a warm water bath until light and fluffy.
Fold in sifted cake flour gently, then mix in the milk and instant coffee.
Spread the batter evenly on a lined baking tray and bake at 180°C for 15 minutes.
Whip cream with sugar until stiff peaks form, then mix in coffee liqueur and dissolved instant coffee.
Cool the cake, brush with coffee syrup, spread coffee cream, and roll tightly.
Chill the roll in the freezer, slice into portions, and dust with powdered sugar before serving.
