食材
Noodles
- 🍜 100g dry soba noodles
Mushrooms
- 🍄 1/2 pack enoki mushrooms
- 🍄 1 shiitake mushroom, sliced
Soup Base
- 50cc mentsuyu (3x concentrated)
- 💧 350cc water
Garnish
- 🧅 Chopped green onion, as needed
Thickener
- 1 tsp cornstarch
- 💧 1 tbsp water
步驟
Trim the root of enoki mushrooms, cut them in half, and separate. Slice the shiitake mushroom thinly.
Boil water in a pot and cook soba noodles according to package instructions. Drain well.
In a pot, combine mentsuyu and water, and bring to a boil over medium heat. Add enoki and shiitake mushrooms, and simmer for 2–3 minutes. Stir in the cornstarch slurry and cook until the soup thickens.
Place the cooked soba noodles in a bowl, pour the thickened soup over them, and garnish with chopped green onions.
