Cut the root ends off the chives and slice them into 4–5 cm pieces.

Crack the eggs into a bowl and whisk them together.

Heat half of the sesame oil (1/2 tbsp) in a frying pan over medium heat, add the whisked eggs, and stir until semi-cooked. Remove the eggs and set them aside.

Add the remaining sesame oil (1/2 tbsp) to the frying pan over medium heat, then stir-fry the bean sprouts and chives until coated with oil. Return the eggs to the pan, add salt and black pepper, and stir. Finally, pour soy sauce along the pan's edge and quickly stir-fry.
