- 🎃 1 whole pumpkin
- 🥚 2 eggs
- 🌰 1 handful of nuts
- 🧂 1 tbsp sugar
步驟
Prepare the pumpkin by washing it thoroughly.
Microwave the pumpkin for 5–6 minutes until soft.
Cut the pumpkin in half, remove the seeds, and scoop out the flesh.
Separate the egg yolks and whites.
Mix the mashed pumpkin with sugar and egg yolks, then add the nuts.
Whip the egg whites into stiff peaks to create meringue.
Fold half of the meringue into the pumpkin mixture, then add the rest and mix gently.
Pour the mixture into paper cups or muffin liners.
Cover lightly with plastic wrap and microwave for 5 minutes.
Serve the fluffy pumpkin muffins with milk for a delicious treat.
