Cut the Kujo green onion into manageable lengths, separating the white and green parts. Boil the white parts for 30 seconds, then add the green parts and boil for another 30 seconds. Cool in water, drain, and cut into 4–5 cm pieces. Squeeze out excess water.

Thinly slice the steamed octopus.

Mix the vinegar miso dressing ingredients in a bowl. Add the green onions and octopus, then toss to combine.
