- 🐟 150g salmon
Herbs
- 8 shiso leaves
Seasoning
- 🧂 Pinch of salt and pepper
Oil
- Enough salad oil for frying
Garnish
- 🍋 2 wedges of lemon
Batter
- Enough flour for coating
- 🥚 1 beaten egg
- Enough breadcrumbs for coating

Cut the salmon into 8 pieces and season with salt and pepper. Lightly coat with flour, wrap each piece with a shiso leaf, and coat again lightly with flour. Dip in beaten egg and coat with breadcrumbs.

Heat salad oil in a pot to 170°C (about 2cm deep). Fry the salmon pieces for 2–3 minutes, turning occasionally, until golden brown.

Plate the fried salmon and serve with lemon wedges.
