    • 3 bell peppers (90g)
    • 🧅 1/2 onion (100g)
    • 1/2 piece minced ginger

    • 1 tbsp salad oil
  • Seasoning

    • 2 tbsp sake
    • 🍬 1 tbsp sugar
    • 3 tbsp miso
    • 1 tbsp oyster sauce

Cut the eggplants into halves lengthwise, then slice diagonally into 1cm pieces. Soak in water and drain. Cut the bell peppers in half, remove seeds and stems, and slice into bite-sized pieces. Slice the onion into wedges. Mince the ginger.

Mix the seasoning ingredients (sake, sugar, miso, oyster sauce) in a bowl.

Heat salad oil and ginger in a frying pan over low heat. Once fragrant, add pork and stir-fry over medium heat until the color changes. Add eggplant and onion, stir-fry until softened. Add bell peppers and stir-fry until coated with oil. Pour in the seasoning mixture, stir, and simmer over low heat for 3 minutes.
