步驟
Peel and cut the potatoes into bite-sized pieces, then soak them in water for 5 minutes.
Place the potatoes and water in a pot, bring to a boil, and cook for about 10 minutes until soft.
Drain the water and heat the potatoes over medium heat to remove excess moisture.
Mash the potatoes in a bowl until smooth.
Add sugar, cream cheese, and potato starch to the mashed potatoes, mixing thoroughly after each addition.
Gradually add heavy cream to adjust the consistency to a pipeable texture.
Place a piece of castella cake on a biscuit and pipe the potato mixture on top.
Garnish with mint leaves and serve.
