- 🥓 4 slices of bacon
- 🥚 2 eggs
- Baby leaf, as needed
- 🍅 2 cherry tomatoes
- 🧀 2 tsp grated cheese
- 🧂 A pinch of pepper
Pancake Batter
- 🥔 4 potatoes, peeled and grated
- 4 tbsp all-purpose flour
- 🥚 1 egg
- 🧂 1/3 tsp salt
- 🧂 A pinch of pepper
- 1 tbsp vegetable oil
步驟
Peel and grate the potatoes. Remove the stems from the cherry tomatoes and cut them into quarters.
In a bowl, mix the egg (for batter), salt, and pepper. Add the grated potatoes and flour, mixing well to form the batter.
Heat vegetable oil in a frying pan over medium heat. Divide the batter into four portions and pour them into the pan. Cook until golden brown, flip, cover, and cook on low heat for 2–3 minutes. Transfer to a plate.
In the same pan, cook the bacon over medium heat until crispy. Remove and set aside.
Crack the eggs into the pan and cook over medium-low heat until they reach the desired doneness for fried eggs.
Arrange the pancakes on a plate, top with bacon, fried eggs, baby leaf, and cherry tomatoes. Sprinkle with grated cheese and pepper.
