Place the potatoes in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 5 minutes. Mash the potatoes while hot, mix in the minced onion, and let cool. Add ham, mayonnaise, and season with salt and pepper to create the potato salad filling.

Place 1/16 of the potato salad filling onto a dumpling wrapper. Moisten the edges of the wrapper with water, fold it in half, and pinch the center. Lay it flat and create a decorative fold. Repeat for all wrappers.

Heat salad oil in a frying pan to 170°C, ensuring the oil is about 1cm deep. Fry the dumplings until golden brown, flipping occasionally. Serve on a plate and garnish with parsley and cherry tomatoes.
