Vegetables
- 🎃 150g pumpkin, diced
- 🍠 150g sweet potato, diced
- 🧅 50g onion, thinly sliced
Seasonings
- 1/3 tsp consomme powder
- 🧂 1/3 tsp salt
- A pinch of black pepper
Condiments
- 2 tbsp mayonnaise
步驟
Remove seeds and pulp from the pumpkin, then dice into 2cm cubes. Dice the sweet potato into 2cm cubes and soak in water for 5 minutes. Thinly slice the onion, soak in water, lightly massage, and squeeze out excess water after 5 minutes.
Place the pumpkin, sweet potato, and 1 tbsp of water in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for about 5 minutes until soft. Drain the water and return to the container. While still warm, add consomme and salt, then mash roughly and let cool.
Add the onion, mayonnaise, and black pepper to the cooled mixture. Mix until well combined.
