Vegetables
- 🎃 1/2 pumpkin, sliced
- 🧅 1/2 onion, sliced
- 🍄 1 king oyster mushroom, sliced
Seasonings
- 4 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp chili powder
- 1 tbsp sesame oil
- 3 tbsp water
- 🧄 1/2 tbsp minced garlic
- 1 tbsp sesame seeds
- 2 green chilies, sliced
- 🌰 2 tbsp pine nuts
步驟

Remove seeds from the pumpkin and slice it thinly. Slice the onion and king oyster mushroom as well.

Mix all the seasoning ingredients in a bowl until well combined.

Heat a pan and stir-fry the onion until translucent. Add the king oyster mushroom and pumpkin slices.

When the pumpkin is about 2/3 cooked, add 3 tbsp of the prepared seasoning and stir well.

Serve the stir-fried vegetables over freshly cooked rice. Top with a soft-boiled egg for a complete meal.
