- 🍆 2 eggplants
- 1 green chili, chopped
Condiments
- 3 tbsp soy sauce
- 🧂 1 tbsp sugar
- 1 tbsp plum extract
- 1/2 tbsp sesame oil

- 🧅 3 tbsp chopped green onion
- 🧄 1/2 tbsp minced garlic

步驟
Slice the eggplants into half-moon shapes, not too thick or thin.
Prepare chopped green onion, minced garlic, and slice the green chili.
Mix soy sauce, plum extract, sugar, and minced garlic in a bowl.
Heat 3 tbsp of cooking oil in a pan and stir-fry the green onion to make scallion oil.
Add the eggplants to the pan and stir-fry until coated with scallion oil.
Pour the prepared seasoning over the eggplants and stir-fry quickly.
Add the chopped green chili and stir to combine.
Cook until the eggplants are slightly softened but not mushy.
Finish with sesame oil and sesame seeds before serving.
