Place the sanma with its head to the left. Use a knife to scrape off the scales from tail to head.

Cut off the head partially, reaching the backbone, then sever the backbone completely. Pull the head backward to remove the internal organs.

Cut the sanma into three equal parts, removing the tail.

Wash the remaining internal parts with water, scrape off blood with chopsticks, and pat dry with kitchen paper.
