Fish
- 220g filleted Pacific saury
Condiments
- 2 honey-pickled umeboshi
Herbs
- 4 shiso leaves
Oil
- Enough salad oil for frying
Breading
- 1 tbsp all-purpose flour
- 🥚 1 beaten egg
- 3 tbsp breadcrumbs
步驟
Pat dry the Pacific saury fillets with a paper towel.
Cut the shiso leaves in half lengthwise and mash the umeboshi into a paste after removing the pits.
Spread 1/4 of the umeboshi paste on each saury fillet, place 1/4 of the shiso leaves on top, roll tightly, and secure with a toothpick.
Coat the rolls in flour, then beaten egg, and finally breadcrumbs.
Heat 3 cm of salad oil in a pot to 170°C and fry the rolls for about 4 minutes until golden brown.
Remove the toothpicks and serve the rolls on a plate.
