- 🦪 6 scallops (130g), sashimi-grade
- 🐟 12 slices (70g) sashimi-grade salmon
- 🧡 3 tbsp salmon roe
Vegetables
- 15g kaiware sprouts
- 🍋 1/2 lemon, sliced and juiced
Sauce
- 1 tbsp olive oil
- 🧂 1/3 tsp salt
- Black pepper to taste

Slice scallops horizontally to halve their thickness.

Trim the roots of kaiware sprouts and cut them in half. Slice lemon thinly and cut into 6 radiating sections. Juice the remaining lemon.

Mix olive oil, lemon juice, salt, and black pepper in a bowl to make the carpaccio sauce.

Arrange salmon, scallops, salmon roe, kaiware sprouts, and lemon slices on a plate. Drizzle with carpaccio sauce.
