Noodles
- 2 servings fresh ramen noodles
Protein
- 150g skinless chicken breast
Vegetables
- 🧅 10cm green onion
- 30g mizuna greens
Seasoning for Chicken
- 🧂 1/4 tsp salt
- 🍬 1/4 tsp sugar
Soup Base
- 💧 700ml water
- 1 tbsp sake
- 🧂 2/3 tsp salt
- Pinch of pepper
- 1 tsp chicken stock powder
- 🧅 10cm green onion (green part)
- 2 slices ginger
Toppings
- 🥚 1 soft-boiled egg
- Pinch of chili threads
步驟
Season the chicken with salt and sugar, wrap it in plastic wrap, and let it sit for 10 minutes.
Cut mizuna into 4cm pieces. Slice green onion thinly and soak in water for 5 minutes, then drain well.
In a pot, combine water, sake, salt, pepper, chicken stock powder, green onion (green part), and ginger. Add the chicken and bring to a boil. Skim off any foam, reduce to low heat, cover, and simmer for 10 minutes. Remove the chicken and strain the soup.
Cook the ramen noodles according to package instructions. Drain and divide into bowls. Pour the soup over the noodles and top with sliced chicken, mizuna, green onion, soft-boiled egg, and chili threads.
