- 🦐 200g peeled shrimp
Vegetables
- 🧅 1/2 onion, minced
- 1/2 red bell pepper, diced
Nuts
- 🥜 50g peanuts
Spices
- 🧄 1/2 tsp grated garlic
- 2 tbsp curry powder
- 🧂 1/2 tsp salt
- Pinch of pepper
Oil
- 1 tbsp salad oil
Grains
- 🍚 4 cups cooked white rice
Soup Base
- 🍅 1 can (400g) diced tomatoes
- 🥛 100cc unsweetened yogurt
- 1 tsp chicken stock powder
- 💧 100cc water
步驟
Clean the shrimp by removing the vein and rinse well. Mince the onion and dice the red bell pepper into bite-sized pieces.
Heat salad oil in a pot over medium heat. Add minced onion and grated garlic, sauté until the onion becomes tender. Add curry powder and peanuts, stir-fry for 1 minute.
Add the soup base ingredients (diced tomatoes, yogurt, chicken stock powder, and water) to the pot. Mix well, cover, and simmer on low heat for 5 minutes.
Add the shrimp and red bell pepper to the pot. Stir and cook until the shrimp is fully cooked. Adjust the taste with salt and pepper. Serve the curry over cooked white rice.
