Cut the spinach into 3cm pieces after removing the roots. Crack the egg into a bowl and whisk to make beaten eggs.

Heat sesame oil in a frying pan over medium heat. Add the peeled shrimp and spinach, and stir-fry for 2–3 minutes. Push the ingredients to one side of the pan and pour in the beaten egg, stirring with chopsticks as it cooks.

Add the seasoning mixture (sake, sugar, oyster sauce, and grated ginger) and stir-fry for another 1–2 minutes.
