- 🦐 200g peeled shrimp
Vegetables
- 2 green peppers
Protein
- 🥚 2 eggs
- 🧈 150g silken tofu
Aromatics
- 1 piece minced ginger
- 🧄 1 clove minced garlic
Seasonings
- as needed cornstarch
- 1 tbsp sake
- 🧂 a pinch of salt and pepper
- 2 tbsp vegetable oil
Sauce
- 1 tbsp sake
- 🍬 1 tbsp sugar
- 💧 100ml water
- 1 tsp chicken stock powder
- 1/2 tsp doubanjiang
- 🍅 3 tbsp ketchup
Thickener
- 1 tbsp cornstarch
- 💧 1 tbsp water
步驟
Cut green peppers into bite-sized pieces, mince ginger and garlic.
Cut tofu into 1cm cubes.
In a bowl, pat shrimp dry with paper towels, then mix with sake, salt, pepper, and cornstarch.
Beat eggs in a bowl and prepare the sauce by mixing all sauce ingredients.
Heat half the vegetable oil in a pan, scramble eggs until half-cooked, then remove.
Heat remaining oil, sauté ginger and garlic until fragrant, then add shrimp and green peppers. Cook until shrimp is golden.
Add sauce and tofu to the pan, mix gently, then thicken with cornstarch slurry.
