- 🐟 1 fillet (80g) kinmedai
Vegetables
- 75g wakagi
- 1 piece ginger
Seasonings
- 💧 100cc water
- 2 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp sake
- 🍬 1 tbsp sugar

Slice ginger into thin strips and cut wakagi into bite-sized pieces. Make a cross-cut on the skin of the kinmedai fillet.

Mix all ☆ seasonings in a pot and heat over medium heat.

Once boiling, add the kinmedai fillet and ginger. Spoon the simmering sauce over the fish. Cover with a drop lid and regular lid, then simmer on low heat for 10 minutes.

Remove the lids and add wakagi. Cover again and simmer for an additional 3 minutes.
