Peel the daikon and cut it into bite-sized pieces.

Heat salad oil in a pot, add chicken wings, and cook until browned on both sides. Add daikon and water, bring to a boil, and skim off any foam.

Cover the pot and simmer on low heat for 15 minutes. Add sake, mirin, and soy sauce, then simmer on medium heat for another 10 minutes to reduce.
