- 🥔 2 medium potatoes (300g)

- 1 tsp salted kombu
- 1 tbsp white dashi
- 1 tbsp mirin

Cut the potatoes into bite-sized pieces and soak them in water to remove excess starch. Drain well.

In a pot, combine the potatoes, white dashi, mirin, and water. Heat over medium heat until boiling, then cover and simmer on low heat for about 10 minutes until tender.

Uncover the pot and cook over medium-low heat until the liquid reduces. Add salted kombu and mix well.
