Fish
- 🐟 1 whole rockfish
Vegetables
- 1 slice of ginger
- 🧅 4 cm green onion
- Chili threads as needed
Seasonings
- 🧂 2 tbsp sugar
- 2 tbsp soy sauce
- 2 tbsp sake
- 2 tbsp mirin
- 💧 150 ml water
- 1/2 tsp dashi powder

Slice the ginger thinly and julienne the green onion to make white hair-like strips.

Make two diagonal cross cuts on the rockfish to allow the flavors to penetrate.

Add all seasoning ingredients to a pan and heat on high until boiling. Add the rockfish and ginger slices.

Cover with aluminum foil as a drop lid and simmer on medium heat for about 10 minutes.

Remove the aluminum foil and reduce the sauce until it thickens and is halved.
