Peel the taro and cut into bite-sized pieces. Place in a bowl, add 1 tsp salt (not listed in ingredients), rub, and rinse 2–3 times while changing the water. Drain. Pat the fried tofu with paper towels to remove excess oil and cut into bite-sized pieces.
