- 🍚 2 bowls of cooked rice (300g)
- 🍗 4 chicken drumsticks (240g)
- 🥚 2 boiled eggs
- 🥔 1 potato (150g)
- 🥕 1/2 carrot (75g)
- 2 bell peppers (60g)
- 🧅 1/2 onion (100g)
- 🍅 1 tomato (200g)
Seasoning
- 🧂 Pinch of salt and pepper
- 1 tbsp salad oil
- 💧 400ml water
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric
- 1/2 tsp chili powder
- 1/2 tsp garlic paste
- 1/2 tsp ginger paste
- 1/2 tsp consomme
- 🧂 1/3 tsp salt
- Pinch of pepper
步驟
Cut the potato into quarters and soak in water. Slice the carrot diagonally, chop the onion finely, and cut the bell peppers into halves and remove seeds. Chop the tomato into bite-sized pieces. Halve the boiled eggs.
Season the chicken drumsticks with salt and pepper.
Heat salad oil in a pot over medium heat. Sear the chicken drumsticks until browned on all sides for about 6 minutes. Remove and sear the bell peppers for 2 minutes until browned, then remove.
Add the chopped onion to the pot and sauté over medium heat for 30 minutes until caramelized. Add the tomato and cook until the moisture evaporates. Mix in the seasonings.
Add water to the pot and bring to a boil. Add the chicken, potato, and carrot. Cover and simmer on low heat for 15 minutes.
Serve the soup curry in bowls, topped with the seared bell peppers and halved boiled eggs. Serve with rice on the side.
