Main
- 150g somen noodles
- 🥒 1/2 cucumber, thinly sliced
- 1 myoga, thinly sliced
- 🧂 2 pinches of salt
Sauce
- 3 tbsp white sesame seeds
- 1.5 tbsp miso
- 🥛 200ml unsweetened soy milk
- 1 pack bonito flakes

Slice the cucumber thinly and sprinkle with salt. Rub gently and let sit for 5 minutes. Squeeze out excess water. Slice the myoga thinly.

Mix all sauce ingredients (white sesame, miso, soy milk, bonito flakes) in a bowl. Add the prepared cucumber and myoga, and mix well.

Boil somen noodles according to package instructions. Rinse under cold water and drain well. Serve the noodles with the dipping sauce.
