Main Ingredients
- 200g somyeon noodles
- 🧅 1/2 onion, thinly sliced
- 🥒 1 cucumber, thinly sliced
- 2 chicken breasts
- 2 green chilies, chopped
- 1/2 red chili, chopped
- Seaweed flakes, optional
- Sesame seeds, for garnish
Pickling Ingredients
- 4 tbsp vinegar
- 2 tbsp sugar
- 🧂 3-4 pinches of salt
Bibim Sauce
- 4 tbsp sugar
- 2 tbsp red pepper powder
- 2 tbsp sesame seeds
- 4 tbsp sesame oil
- 6 tbsp soy sauce
- 4 tbsp vinegar
- 0.5 tbsp minced garlic
- 1 tbsp ketchup
- 1 tbsp gochujang
- 10 twists of black pepper
- 4 tbsp pickling liquid
步驟
Thinly slice the onion and cucumber using a knife or mandoline slicer.
Chop the green and red chilies into small pieces.
Mix vinegar, sugar, and salt in a bowl. Add sliced onion and cucumber and let them pickle for 20 minutes.
Squeeze the pickled onion and cucumber to remove excess liquid. Reserve the pickling liquid for the sauce.
Prepare the bibim sauce by mixing sugar, red pepper powder, sesame seeds, sesame oil, soy sauce, vinegar, minced garlic, ketchup, gochujang, black pepper, and reserved pickling liquid.
Defrost chicken breasts in the microwave for 1-2 minutes, then shred them along the grain.
Boil water in a pot and cook the noodles until tender. Rinse under cold water to remove starch.
Arrange noodles on a plate. Top with pickled onion and cucumber, shredded chicken, seaweed flakes, sesame seeds, and chilies.
Pour the bibim sauce beside the noodles, not directly on top, and serve.
