Vegetables
- 1 bitter melon (250g)
Spices
- 1 tsp sliced red chili
- 2 tsp toasted white sesame seeds
- 1 packet (4g) bonito flakes
Seasonings
- 2 tbsp sake
- 2 tbsp mirin
- 🍬 1 tbsp sugar
- 2 tbsp soy sauce
- 💧 100 ml water
步驟
Cut off both ends of the bitter melon, slice it lengthwise, and remove seeds and pith with a spoon. Slice into thin 5mm pieces.
Boil water in a pot, add the bitter melon slices, and cook for 2 minutes. Drain well.
Add bitter melon, chili, and seasonings (☆) to a pot. Heat over medium heat until boiling, then cover and simmer on low heat for 7-8 minutes until the bitter melon softens. Remove the lid, increase to medium heat, and stir until the liquid reduces. Add sesame seeds and bonito flakes, mix well.
