步驟
Cut open the mentaiko and extract the roe.
Place spinach in a microwave-safe container, add 1 tbsp water, cover loosely with plastic wrap, and microwave at 600W for 2 minutes. Rinse with cold water, squeeze out excess moisture, and cut into bite-sized pieces.
In a microwave-safe container, beat the eggs, season with salt and pepper, cover loosely with plastic wrap, and microwave at 600W for 1 minute.
Mix the eggs again, cover loosely, and microwave at 600W for another 1 minute to create scrambled eggs.
In a bowl, mix mentaiko and mayonnaise. Add spinach and scrambled eggs, then mix well.
