    • 🍗 1 chicken breast (250g), skinless
    • 3–4 leaves Chinese cabbage
    • 1 piece ginger
    • 1 tbsp potato starch
    • 1 tbsp sake
  • Chicken Marinade

    • 2 tsp sake
    • 2 tsp soy sauce
    • 1 tsp grated ginger
  • Ginger Ponzu Sauce

    • 1 piece minced ginger
    • 🧅 1/3 stalk minced green onion
    • 3 tbsp ponzu sauce
    • 1 tsp white sesame seeds
    • 2 tbsp steaming liquid

Slice chicken breast into 1cm thick pieces, cover with plastic wrap, and flatten to 5–7mm thickness using a rolling pin.

Place chicken in a bowl, add marinade ingredients (sake, soy sauce, grated ginger), mix well, then add potato starch and mix again. Let it rest for 10 minutes.

Cut ginger into thin strips and mince the remaining ginger for the sauce. Mince the green onion.

Layer Chinese cabbage, half the chicken, and one-third of the ginger strips. Repeat layering with remaining chicken and ginger, then cut into 6 portions. Place in a microwave-safe dish, sprinkle sake, and top with remaining ginger strips. Cover loosely with plastic wrap and microwave at 600W for 10 minutes. Reserve 2 tbsp of steaming liquid.

Mix reserved steaming liquid with ponzu sauce, minced ginger, green onion, and sesame seeds to make the sauce. Serve the steamed chicken and cabbage with the sauce.
