- 🐚 200g clams (purged)
Vegetables
- 250g pea shoots
- 🧅 30g minced green onion
- 1 piece julienned ginger

- 1/2 tsp sliced chili

- 80ml Shaoxing wine
- 1/2 tsp soy sauce

Wash the clams thoroughly in a bowl of water, rubbing them together to clean. Drain the water.

Trim the roots off the pea shoots and cut them in half. Mince the green onion and julienne the ginger.

Layer the pea shoots, clams, green onion, ginger, and chili in a frying pan. Pour Shaoxing wine and soy sauce over the ingredients.

Cover the pan with a lid and cook over medium-low heat for 6–8 minutes until the clams open.
