Main Ingredients
- 400g ground chicken
- 茄子 1 long eggplant, 160g
- 🧂 1/3 tsp salt
- 1/2 tsp grated ginger
- 1 tbsp potato starch
Scallion Sauce
- 1/2 stalk scallion, minced
- 1 myoga, minced
- 🍬 1 tsp sugar
- 1 tbsp vinegar
- 1 tbsp soy sauce
- 1 tbsp sesame oil
步驟
Slice the eggplant thinly and soak in water. Drain well. Mince the scallion and myoga.
Mix all the scallion sauce ingredients in a bowl.
Place ground chicken in a microwave-safe container. Add salt and grated ginger, mix well, and spread evenly. Sprinkle potato starch on top.
Layer the sliced eggplant on top of the chicken mixture. Cover loosely with plastic wrap and microwave at 600W for about 6 minutes until the chicken is cooked through.
Pour the scallion sauce over the steamed eggplant and chicken.
