- 1 bitter melon (150g)
Condiments
- 1.5 tbsp salted kombu

- 1/2 tbsp sesame oil

- 1 tbsp white sesame seeds

Cut off both ends of the bitter melon, slice it in half lengthwise, and use a spoon to remove the seeds and pith. Slice into thin pieces about 5mm thick.

Heat sesame oil in a frying pan over medium heat. Add the bitter melon and salted kombu, stir-frying for 3–4 minutes until the bitter melon softens. Add white sesame seeds and mix briefly.
