- 🥓 4 slices bacon
Vegetables
- 🍆 1 medium eggplant (80g)
- 3 bell peppers (90g)
- 🧄 1 clove garlic, minced
Condiments
- 1 tbsp olive oil
- 🧂 1/3 tsp salt
- Pinch of pepper

Cut the bacon into thirds.

Slice the eggplant in half lengthwise, then into 1cm thick pieces. Halve the bell peppers, remove stems and seeds, and slice into 1cm strips. Mince the garlic after removing its core.

Heat olive oil and garlic in a pan over low heat until fragrant.

Add bacon and eggplant to the pan and stir-fry over medium-low heat until the eggplant softens.

Add bell peppers and stir-fry for 2 minutes. Season with salt and pepper, then mix well.
