Fish
- 🐟 2 filleted sardines
- 🧂 A pinch of salt and pepper
Vegetables
- 🍆 1 medium eggplant, sliced into 5mm rounds
- 1 piece of ginger, minced
- 🧅 1/2 stalk green onion, minced
Spices and Seasonings
- 1/2 tsp Sichuan pepper powder
- 🧂 1/4 tsp salt
- 🍶 1 tsp soy sauce
Other
- 1 tbsp cornstarch for sardines
- 1 tbsp cornstarch for eggplant
- 150 ml vegetable oil for frying
- 1 tbsp vegetable oil for stir-frying
步驟
Cut the sardines into bite-sized pieces, season with salt and pepper, and coat with cornstarch.
Slice the eggplant into 5mm rounds, soak in water for 3 minutes, pat dry, and coat with cornstarch.
Mince the ginger and green onion.
Heat vegetable oil in a frying pan and fry the eggplant for 3 minutes until golden. Remove and set aside.
Fry the sardines in the same oil for 3 minutes until crispy. Remove and set aside. Transfer the oil to a separate container.
In the same pan, add 1 tbsp of vegetable oil and stir-fry the ginger and green onion until fragrant. Add salt, Sichuan pepper, and soy sauce, mixing well.
Return the sardines and eggplant to the pan, toss to coat evenly with the sauce, and serve.
