Chicken
- 🍗 500g chicken thighs
Fruits & Vegetables
- 🍎 1/8 apple
- 🧅 1/8 onion
Cooking Oils & Powders
- sufficient amount of vegetable oil
- sufficient amount of cornstarch
- 200cc coconut milk
- 250cc water
- 4 tsp sesame oil
Herbs & Greens
- sufficient amount of cilantro
- sufficient amount of shiso leaves
- sufficient amount of leaf lettuce
- sufficient amount of black pepper
Seasonings (A)
- 1 tsp grated ginger
- 1 tsp grated garlic
- 1/4 tsp chicken stock powder
- 2 tbsp soy sauce
- 2 tbsp sake
- 🧂 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp chili powder
Batter (B)
- 100g all-purpose flour
- 100g rice flour
- 1 tsp turmeric
Sauce (C)
- 3 tbsp chili sauce
- 1 tbsp fish sauce
- 🍋 1 tbsp lemon juice
步驟
Cut the apple, chicken thighs, and onion into bite-sized pieces.
Blend the apple, onion, and seasonings (A) in a food processor.
Place the blended mixture and chicken in a plastic bag, massage thoroughly, and marinate overnight.
Coat the marinated chicken lightly with cornstarch and deep-fry at 180°C for about 5 minutes until golden brown.
Prepare the batter by mixing ingredients (B) with coconut milk and water until smooth.
Heat a pan, lightly grease with vegetable oil, pour 1/4 of the batter, and cook on low heat until edges are crispy. Flip and cook briefly.
Wrap the fried chicken in the prepared batter sheets along with cilantro, shiso leaves, lettuce, and top with chili sauce (C) and black pepper.
