Main Ingredients
- 🍆 1 eggplant
- 🍚 1 serving of cooked rice
- Adequate amount of cooking oil
Seasoning Sauce
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp corn syrup
- 1 tsp chili powder
- A dash of black pepper
- 💧 2 tbsp water
步驟
Wash the eggplant thoroughly, remove the top and bottom ends, and slice it lengthwise into halves.
Cut the eggplant into bite-sized pieces and place them in a pan. Optionally, add sliced onions for extra flavor.
Heat the pan with a generous amount of cooking oil over medium heat and stir-fry the eggplant until slightly softened. Avoid overcooking.
Mix all seasoning sauce ingredients in a bowl to create the sauce.
Add half of the sauce to the stir-fried eggplant and coat evenly.
Pour the remaining sauce over the eggplant and stir until evenly coated.
Simmer the eggplant over medium-low heat until the flavors are fully absorbed. Adjust seasoning with water or soy sauce as needed.
Serve the cooked eggplant over warm rice. Garnish with sesame seeds or parsley as desired.
