Main Ingredients
- 1 piece chikuwa
- 20g dried hijiki
- 🥕 1/3 carrot
- 100g lotus root
- 1/2 tbsp sesame oil
Seasoning (☆)
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 🧂 1 1/2 tbsp soy sauce
- 1/2 tsp Japanese dashi granules
- 💧 100cc water
步驟
Rehydrate the dried hijiki in plenty of water, then drain well.
Cut the chikuwa into small diagonal pieces.
Cut the carrot and lotus root into small diagonal pieces. Soak the lotus root in water to remove excess starch, then drain.
Heat sesame oil in a pot over medium heat. Add the carrot and lotus root, and stir-fry until softened. Add the hijiki and stir briefly, then add the chikuwa and stir-fry together.
Add the ☆ seasonings and place a drop lid on top. Simmer over low heat for 7–8 minutes. Remove the lid and continue to cook until the liquid reduces to a small amount at the bottom of the pot. Turn off the heat and let it cool slightly in the pot.
