    • 🍠 1/2 sweet potato (200g), peeled and diced
    • 🥬 4 leaves of salad lettuce
    • 🍅 4 cherry tomatoes

    • 🧂 A pinch of sugar
    • 1 tsp vinegar
  • Curry Mayo Dressing

    • 🧂 Salt and pepper to taste
    • 3 tbsp mayonnaise
    • 1 tbsp whole grain mustard
    • 1 tsp curry powder
    • Chopped parsley as needed

Drain the canned tuna. Dice the onion into 1cm cubes. Peel and dice the sweet potato into 1cm cubes, then soak in water for 5 minutes and drain.

Place the diced onion and sweet potato in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 4 minutes.

While still warm, mash half of the sweet potato lightly, then mix in sugar and vinegar. Let it cool slightly.

Add the tuna and curry mayo dressing ingredients (mayonnaise, mustard, curry powder, parsley, salt, and pepper) to the sweet potato mixture and mix well. Serve with salad lettuce and cherry tomatoes.
