Fish
- 🐟 4 sardines, cleaned (360g)
Condiments
- 🍑 2 umeboshi (pickled plums)
- 3 slices of ginger
Seasonings
- 🍶 2 tbsp sake
- 2 tbsp mirin
- 🧂 1/2 tbsp sugar
- 2 tbsp soy sauce
- 100 ml water

Mix all seasonings (☆) in a pressure cooker. Add sardines, umeboshi, and sliced ginger. Bring to a boil, cover, and heat on medium until pressure builds. Reduce to low heat and cook for 15 minutes under pressure. Turn off the heat and let the pressure release naturally.

Remove the lid and simmer until the sauce reduces and thickens.

Plate the sardines and umeboshi, and serve.
