Main Ingredients
- 100g ground chicken
- 300g firm tofu
- 1/2 tbsp salad oil
Burger Mixture
- 100g boiled bamboo shoot
- 15cm white part of green onion
- 1/2 tsp Japanese dashi powder
- 2 tbsp potato starch
Sauce
- 1 tsp vinegar
- 1.5 tbsp concentrated soy sauce
- 1/2 tbsp potato starch
- 100ml water
Garnish
- 2 shiso leaves
步驟
Wrap tofu in kitchen paper, place on a microwave-safe plate, and heat at 600W for 2 minutes. Let it cool and drain the water.
Chop bamboo shoots coarsely, mince the green onion, and slice shiso leaves thinly.
In a bowl, mix ground chicken and drained tofu until sticky. Add the burger mixture ingredients and mix well. Divide into 4 portions and shape into oval patties.
Heat salad oil in a frying pan over medium heat. Cook the patties for 3 minutes until browned, then flip, cover, and cook on low heat for another 3 minutes until fully cooked.
Clean the frying pan lightly, add the sauce ingredients, and heat over medium heat while stirring until thickened.
Plate the tofu burgers, pour the sauce over them, and garnish with shiso leaves.
