Main Ingredients
- 🥚 2 eggs, beaten
- 200g silken tofu
- 1 piece fried tofu (20g)
- 🧅 1/2 onion, sliced
Seasonings
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1 tbsp soy sauce
- 1/4 tsp Japanese dashi powder
- 💧 150ml water
Garnish
- 🧅 Chopped green onions, as needed
步驟
Slice the onion thinly.
Cut the tofu into bite-sized pieces. Pat the fried tofu with a paper towel to remove excess oil, then cut into 1.5cm cubes.
In a small pot, combine all seasoning ingredients and heat over medium heat. Once boiling, add the onion, cover, and simmer on low heat for 5 minutes.
Add the tofu and fried tofu to the pot, cover, and simmer for 2 minutes.
Pour the beaten eggs evenly into the pot. Cook over medium heat until the edges begin to set. Cover, turn off the heat, and let it rest until the eggs reach your desired consistency.
Sprinkle chopped green onions on top before serving.
