Mix the cooked rice with sushi vinegar in a bowl using a cutting motion, then let it cool to make sushi rice.

Cut the roasted seaweed sheet in half lengthwise.

Place one piece of seaweed horizontally on a bamboo mat. Spread half of the sushi rice (75g) evenly over the seaweed, leaving about 1cm at the top edge.

Add half of the minced fatty tuna and chopped pickled radish on top of the rice. Roll tightly from the bottom edge, ensuring the filling stays intact. Repeat to make two rolls.

Let the rolls sit until the seaweed softens. Cut each roll into two halves, then slice each half into three pieces. Serve with soy sauce on the side.
