Boil water in a pot. Add the Malabar spinach stems for 20 seconds, then boil the whole spinach for 1 minute. Transfer to cold water, squeeze out excess water, and cut into 3cm pieces.

In a bowl, mix soy sauce, water, and the prepared spinach. Serve in a dish and top with bonito flakes.
